After boiling, the 'wort,' as the liquid is now called, is transferred to the whirlpool, a large insulated tank with a raised flat bottom. The liquid is spun as it's transferred and the centrifugal force pushes the solids to the center where they settle. The wort is drawn from the periphery leaving as much coagulated protein and hop material as possible behind.
