The liquid from the lauter tun is transferred to the kettle where it is brought to a boil. At the onset of the boil, hops are added. Like tea, hops impart bitterness over time. When introduced at the end of the boil, they give a more floral, aromatic effect. Hops can also be added in the whirlpool.
