12. Mash Transfer Pump

In the case of a lager, the mash is first mixed in the kettle at a low temperature. It is slowly brought up in temperature to sacrification at ~150º. This degrades protein and favors enzymatic reduction to give lagers a crisper taste. When the target temperature is reached, the entire mash is transferred to the lauter tun for runoff.
