10. Lauter Tun - Milled Plate

Brew process pt. #1 cont.
A milled plate acts as a strainer to hold back the large particles. The mixture is recirculated back to the top of the mash until the liquid runs clear. This happens as the husks of the grain interlock to form an additional strainer. Special care must be taken to ensure that the liquid is not drawn too fast as the mash will 'compact' and the husks will form a dense mass from which liquid can't be drawn anymore.
